Baked Spanish Omelette |

Ingredients
Margarine or oil for greasing 1 onion finely chopped 2 Medium- sized potatoes sliced 1 tbsp of Olive oil 1 clove of garlic peeled and crushed 100g (4oz) Frozen peas, thawed 4 eggs 1 Tbsp of hot water 150ml (a quarter of a pint) milk Salt and black pepper to taste |
Method
1) Preheat oven to 180°C 2) Using some kitchen towel grease the inside of an oven dish 3) Heat the oil in a frying pan and add the chopped onions and sliced potatoes cook for 4 minutes until they begin to soften 4) Add the garlic and cook for another 2 minutes 5) Place the mixture at the bottom of the oven proof dish and add the peas 6) Beat the eggs in a bowl and add the milk and hot water and beat with a fork or a whisk. 7) Add salt and pepper to taste 8) Pour the egg mixture over the potato the vegetables 9) Bake for 45 minutes |
