Salmon Risotto |

Ingredients
2 Salmon fillets 75g/2 ½ oz of white breadcrumbs 1 shallot finely chopped 1 tbsp vegetable oil or olive oil for frying Salt and ground pepper to taste |
Method
1) Place the salmon, breadcrumbs, egg white, shallot and basil into a food processor and pulse until combined but not pureed 2) Season with Salt and Pepper 3) Divide into 8 portions and shape into burger shape 4) Heat the oil in a frying pan and add the burgers and fry for 3 minutes on each side or until golden-brown and completely cooked through Tips: The burgers can be prepared in advance and kept chilled. Great served with a salad or to have on a BBQ
