Red Onion & Olive Tart

Preparation time 10 minutes
Cooking time 25 minutes
For 4 people ~ a great starter
Ingredients
75ml/5tbsp extra virgin Olive Oil
500g/1¼ lb small red onions finely chopped
500g/1¼ lb puff pastry thawed if frozen
75g/30z pitted black olives

1) Preheat the oven to 220ºc 

2) Heat oil in a large frying pan and gently cook the onions for 15-20 minutes until soft and golden

3) 
Roll out the pastry thinly on a flour board and cut to 33cm/13in round and place on a greased baking sheet

4) Spread onions over the pastry leaving 1cm/½ inch edge


5) Sprinkle olives on the top

6) 
Bake for 20-25 minutes until the pastry is risen and golden

7) Serve up with fresh garden salad
