Pork, Ginger & Cider Casserole

Preparation time 5 minutes
Cooking time 3 hours
For 4 people
Ingredients
1lb of Pork loin chopped into cubes
2 tbsp of oil for frying
2 tbsp of brown sugar
2 heaped tsp of ginger paste
4 heaped tsp of corn flour
½ pint of dry cider

Method
1) Fry the chopped pork in a frying pan for 1 minute to seal in the flavour

2) Add the brown sugar and ginger paste and fry for another minute


3) Add the corn flour and mix well


4) Add the cider and stir


5) Transfer to a slow cooker and cook on high for 3 hours (Adjust heat to low or medium if you want to leave the casserole for example if you want to go out for the day)


6) Alternatively cook in a conventional oven in a casserole dish at 180°c for 2 hours
Tips: Add some carrots or other vegetables such as potatoes if you want an all in one dish.  Or serve with seasonal vegetable on the side. You can also cook this as a joint but it will obviously need cooking for longer depending on the size.
