Ingredients
4 red peppers and 2 orange or yellow peppers 4tbsp of Olive oil 250g/9oz of halloumi cheese 50g/2oz pine nuts |
Method
1) Preheat oven to 220°C 2) Half the red peppers leaving the stalks intact, discard the seeds 3) Seed and coarsely chop the orange or yellow peppers 4) Place the red pepper halves on a baking tray and fill with the chopped peppers 5)Drizzle with olive oil and bake for 25 minutes 6) Dice the cheese and tuck in among the chopped peppers 7) Sprinkle with pine nuts and the remaining oil and bake for a further 15 minutes until brown |
