ROOT VEGETABLE SOUP |

Ingredients
2 large white potatoes peeled and chopped 2 large sweet potatoes peeled and chopped 1 small swede peeled and chopped 6 medium sized carrots peeled and chopped 2 vegetable or chicken stock cubes |
Method
1) Place vegetables in a large saucepan and cover with boiling water 2) Add the stock cubes and stir until dissolved 3) Once the vegetable are cooked leave to cool in the stock 4) Once cool place in a blender or use a hand blender 5) If the soup is too thick add some boiling water or fresh cream 6) Heat through and Serve Tips: Any root vegetables can be used for this soup or alternatively use leftover vegetables by adding the stock and blending. |
