Ingredients
115g/40z butter 1kg/2lbs onions slices 1Litre /1¼ pints of chicken or vegetable stock 150ml/¼ pint cream |
Method
1) Melt the butter in a large heavy saucepan 2) Add the sliced onions and cook on a moderate heat for 30 minutes 3) Add the stock 4) Leave to cool 5) Process in a blender or hand whisk 6) Add the cream 7) Gently reheat and serve Tips: Add some extra fried onions for extra texture
