Baked Ricotta Cakes with Red Sauce |

Ingredients
250g/9oz of Ricotta Cheese 2 Egg whites beaten 60ml/4tbsp of honey 450g/1lb/4 cups of frozen red fruit (defrosted) Sugar (optional) Water (optional) |
Method
1) Preheat oven to 180°C 2) Place the Ricotta cheese in a bowl and break it down with a wooden spoon 3) Add the beaten egg whites and honey and mix thoroughly 4) Place in lightly greased ramekins 5) Bake for 20 minutes or until the Ricotta cakes are risen and golden 6) Blend the fruit and add either sugar or water if too tart 7) Turn Ricotta cakes out of ramekins once cooled and serve with the fruit sauce |
