Ingredients
1 Medium onion peeled and finely chopped 1 red pepper seeded and finely chopped 1 green pepper seeded and finely chopped 2 medium courgettes sliced 2 tins chopped tomatoes |
Method
1) Fry the onion on a medium heat for 5 minutes 2)Add the peppers and courgettes and continue to cook until soft 3) Add the chopped tomatoes and heat through Tips: To make it a bit more interesting use fresh tomatoes instead of tinned and some fresh basil or add some crushed garlic and or chillies to spice it up. By adding a tbsp of balsamic vinegar it will also sweeten the dish slightly.
